coconut chutney

Servings : 2

Ingredients

Coconut powder/ fresh grated coconut 1 cup
4 pieces of green chili
2 pieces of garlic
cilantro 1/2 cup
lemon juice 2 or 3 spoons
sugar 1/2 spoon
salt as per your taste
yogurt/curd for mixing chutney

Direction : mix all above ingredients in mixer/grinder/food processor and grind it. Then
add some water and  mix it well. Again grind to a smooth consistency. chutney is ready.
remove chutney in a bowl.



Add some yogurt/curd to chutney and mix it well.  Enjoy !

Sooji Halwa




Ingredients :

coarse semolina (sooji) 1 cup
warm milk 1 and 1/2 cup
warm water 1/2 cup
granulated sugar 1 cup
banana -  thick round pieces 5 to 6
saffron 4 to 5 strips
clarified butter 1/2 cup
1 T.spoon milk for adding roasted saffron
roasted dryfruits for garnish



Stepwise direction : keep pan on a medium heat. Add semolina/sooji and clarified butter together and roast it until it gets brown color. This is very important step. Then add banana pieces in it and again roast it for few seconds. Add warm water and milk.

roast saffron in a separate pan and add it in warm milk. add this colored milk in roasted semolina. stir it well. Keep lid on the pan. now turn the heat to low. cook this mixture about 3 to 4 minutes. After that take off the lid and stir it for  few seconds. Then add sugar. after adding sugar stir the mixture again for  few seconds. Now all the mixture gets little bit thin. stir it again for few seconds.

 keep the lid on a pan. After 3 minutes take off the lid and stir it well. Turn off the stove. serve it! This sooji  halwa is famous for prasad, but you can have it for breakfast. garnish it with roasted dryfruits. roast dryfruits with few drops of clarified butter. Enjoy !

Poha (1)




Serving - 2

Ingredients :

Thick poha 2 1/2 cup
medium size chopped onion 1 cup
Thinly chopped potato 1/2 cup
roasted peanuts 1/2 cup
green peas 1/2 cup
chopped green chillies 2 to 3
curry leaves 4 to 5
salt to taste
sugar 1/2 T.Spoon
oil 1/2 cup
red chilli powder 1/2 T.Spoon
mustard seeds , jeera, asafoetida, turmeric powder for Tadka
thinly chopped cilantro and grated fresh coconut for garnish


Stepwise direction : keep pan on medium heat. Add oil. Be sure oil must be sufficient hot. Add mustard seeds and jeera.  After cracking the mustard seeds and jeera add asafoetida, turmeric powder. Then add all ingredients ( onion, potato, green peas, green chillies, curry leaves) stir it well. Keep lid on a pan. After 5 minutes take the lid off and stir it again. Be sure that all the ingredients must cook well ! Then only add poha and  stir it. Then add red chilli powder, salt, sugar. again stir it. keep the lid on a pan for 5 minutes. take the lid off and stir it. Turn off stove.

garnish with cilantro and coconut powder. Serve it ! Enjoy !

Tomato Onion Salad


Ingredients :

2 small size tomato
1/2 small size onion
chopped green chillis 2 - 3 pieces
chopped cilantro 1 spoon
peanut powder 1 spoon
salt for taste
sugar 1/2 spoon





direction : chop tomato and onion, add chopped  green chilli and  cilantro, peanut powder, salt and sugar, then mix it well.  salad is ready to serve.

Bhel





Ingredients:

puffed Rice
farsan
finely chopped onions
finely chopped red tomatoes
finely chopped cilantro
red chili powder
coriander powder
cumin powder
tamrind extract
jaggery
salt and sugar
fine sev



Stepwise Direction :


Tamrind extract : soak tamrind into warm water for about 3 to 4 hours. mash tamrind in water itself. Then remove all mashed tamrind. Add chopped jaggery. Boil this mixture in microwave for 2 to 5 minutes.



In a big mixing bowl add puffed rice, farsan, onions and tomatoes. Then add red chilli powder, coriander and cumin powder as per your taste. Also add salt and sugar. Add tamrind and jaggery mixture.. Mix it well!


Garnish with cilantro and fine sev.

Pasta



Ingredients :

pasta 3 cups
finely chopped cabbage 1 cup
finely chopped carrot 1 cup
finely chopped capsicum 1 cup
green peas 1 cup
finely chopped onion 2 spoons
2-3 peices garlic (finely chopped)
tomato sauce (hunts' or spaghetii) 1 Tin
oil for tadaka
mustard seeds
asafeotida powder
termeric powder
coriander and cumin powder 1 spoon
red chilli powder 1 spoon
salt

Stepwise Direction:

Boil pasta in water in a separate pan. After boiling pasta drain the excess water.

Heat oil in a separate pan on medium heat. once the oil is sufficiently hot, add mustard seeds, asafetida and termeric powder. Then add garlic and onion. fry it for few minutes. Then add all vegetables (cabbage, carrot, capsicum, green peas). Add little water. stir it ell. keep lid on a pan. Allow to cook vegetables for 10 minutes. Then take the lid off. stir it well. Then add boild pasta, stir it well. Then add red chilli powder, coriander and cumin powder. Add salt and stir it well.

Then add tomato sauce and stir it well. keep lid on a pan. After 10 minutes take the lid off. stir it well and turn off heat.

served with grated cheese.

Onion Uttappam



Ingredients :

Rice 2 cups (Long Grain Rice)
Urad Dal 1/2 cup
Chopped onions (medium shape) 1&1/2 cup
Finely chopped cilantro 1/2 cup
Green Chilles 2-4 (chopped medium shape)
Salt
Oil

Stepwise Direction :

Soak rice and urad dal in water separately for 10 to 12 hours. Drain the excess water and grind it together in a mixer/grinder to a consistency of condensed milk. Allow it to ferment for additional 10 to 12 hours at room temperature. It is important to keep it covered during fermentation.

Next day morning add half of the batter in a separate bowl. Add little water and salt. Also add chopped onions, cilantro and green chilles. Mix it well.

On a medium heat keep flat pan and spread little oil. Then spread the fermented batter (one big spoon at a time) After few seconds spread oil on the top of the uttappam. After few seconds flip the uttappam and heat it till brown and crispy.

Serve Uttappam with Sambar and Chutney.

Dates Almond Cashew Milk Shake



Serving - 4 persons

Ingredients

Chopped Dates 1 cup
cold milk 4-5 cups
Almond powder 2 spoons
Cashew powder 2 spoons
sugar 2 spoons


Stepwise Direction :- Soak chopped dates in cold milk(one cup) for 3-4 hours, then grind it in blender for 2-3 minutes. then add almond and cashew powder and milk (3-4 cups) again grind it for 2 minutes. add some sugar and grind it 2-3 minutes. Milk shake is ready. keep it in refridgerator for 2-3 hours and then serve it.

This is my experiment in the kitchen. enjoy!

Ukad



Servings : 2 persons

Ingredients :

Sour buttermilk 2 cups
Rice flour
4 to 6 small pieces of green chillies
Salt
oil for tadaka
mustard seeds
asafetida powder
turmeric powder
for garnishing finely chopped cilantro
pieces of white onion
oil

Stepwise direction : Heat oil in a sauce pan. once the oil is sufficiently hot, add mustard seeds. you should hear craking noise, add asafetida powder, turmeric powder, pieces of green chillies. Then add buttermilk and salt. stir it well.

Once buttermilk starts boiling, start adding rice flour and keep stiring with other hand. remove all the lumps with the spoon. now the mixture will become think. do not add too much rice flour. now keep the heat on low temp. cover pan with lid and let it cook for 3-4 minutes. turn off stove.

After 5 minutes take the lid off, add some oil in it and stir it well. garnish with chopped cilantro.

serve ukad hot with some extra oil in it and white onion.

Stuffed Tondli




Servings : 2 persons

Ingredients :

Tondli 20-22
Roasted peanut powder 1/2 cup
Coconut powder 1/2 cup
Seasame powder 1/4 cup
Red chilli powder 1 spoon
Cumin powder 1 spoon
Coriander powder 1 spoon
Garam masala 1 spoon
Grated jaggery 3 to 4 spoons
Salt
Chopped cilantro 1/2 cup
Oil for tadka
Mustard seeds
Asafoetida
Turmeric powder

Stepwise Direction :

Wash tondli and dry on paper towel. Cut both the ends of tondli. Make small cuts as shown in the picture.

Mix all the following ingredients to make the filling. (i. e. coconut powder, peanut powder, seasame powder, red chilli powder, cumin and coriander powder, garam masala, jaggery, cilantro and salt) Now stuff this filling in the cuts of each tondli. as shown in the picture.

Make tadka as follows;

Heat oil in a sauce pan. Once the oil is sufficiently hot, add mustard seeds. you should hear cracking noise. then add asafoetida and then termeric powder. Add stuffed tondli. Add some water. Cover with a lid for 10 minutes. After 10 minutes take the lid off, stir the stuffed tondli. put the lid back and heat for 15 more minutes, then turn off stove.

Serve this with roti or rice.

Sandwich



Servings : As per your requirement


Ingredients :

Slice Bread
Butter/Pure ghree
Potato
Onion
Garlic
Green Chilli
Cilantro
Sugar
Salt
Oil


Stepwise Direction : Boil potatoes, then mash the potatoes. Add finely chopped onion, gardlic, green chillies, and cilantro. Add sugar and salt as per your taste. Mix it well.


Cut all corners of the slice bread. Spread the filling (potato mixture) on one slice. Then spread butter/pure ghee on other slice. Keep these two slices on top of each other. Place the sandwich in the sandwich toaster and apply oil on both sides of the toaster. Toast it untill it is crispy and brown.

Enjoy sandwich with tomato ketch up /salsa.

Pav Bhaji




Servings : 2 persons




Ingredients :




Green peas 2 cups
Potato 1
medium size chopped capsicum 1 cup
medium size chopped cabbage 1 cup
medium size chopped cauliflower 1 cup
Tomatoes 4
Red chilli powder 2 spoons
Coriander powder 1 spoon
Cumin powder 1 spoon
Pav bhaji masala 2 spoons (Badshah or M D H masala)
Salt
butter 8 - 10 spoons
Garlic and green chilli paste 2 spoons
finely chopped onion 2 spoons
bread 4 slice


For Garnishing :




finely chopped onion
finely chopped tomatoes
finely chopped cilantro
shredded cheese
chopped lemon
butter



Stepwise Direction :




Add water to pressure cooker followed by vegetables with some water. Cook all vegetables. Drain excess water. peel skins of potatoes and tomatoes. mash all vegetables except tomatoes.




Heat frying pan on a medium temp. Add 2 spoons butter, garlic chilli paste and finely chopped onions. Fry it till brown in colour. Add all mashed vegetables, stir it. add some water. Also add red chilli powder, cumin and coriander powder, pav bhaji masala and salt. Stir it. Then add 4 spoons butter. keep the heat on medium low level. Grind tomatoes in mixer/grinder. Add tomato paste and stir it well. After 5 minutes add 4 spoon butter again stir it well.




Garnish bhaji with butter, shredded cheese, cilantro, onion, tomato and lemon juice.




Heat flat pan. add butter. heat bread in butter and fry it till crispy.




serv Hot!!

Bhel (2)

Ingredients :


Puffed Rice (murmura)
Farsan
finely chopped onions
finely chopped cilantro
roasted peanuts
green chilis
salt
fresh coconut powder


Stepwise direction: grind green chili with salt in mixer/grinder. In a big mixing bowl add puffed rice (murmura) , farsan. Then add onions, cilantro, roasted peanuts and mixture of green chili and salt. Also add fresh coconut powder.


Mix it well!

Bhel

Ingredients:

red chili powder
coriander powder
cumin powder
mint chutney
tamrind extract
jaggery
salt and sugar
fine sev
puris of pani puri


Stepwise Direction :


Tamrind extract : soak tamrind into warm water for about 3 to 4 hours. mash tamrind in water itself. Then remove all mashed tamrind. Add chopped jaggery. Boil this mixture in microwave for 2 to 5 minutes.


Mint chutney : Grind the mixture of mint leaves, cilantro and green chilis from the mixer, and then add sugar and salt. add some water.


In a big mixing bowl add puffed rice, farsan, onions and tomatoes. Then add red chilli powder, coriander and cumin powder as per your taste. Also add salt and sugar. Then add mint chutney, tamrind and jaggery mixture and few pieces of raw mango and puries of pani puri. Mix it well!


Garnish with cilantro and fine sev. While eating use puri of pani puri as a spoon.

Idli



Serving: 4 persons

Time : 30 minutes

Ingredients:

Rice 2 cups (long grain rice)
Urad dal 1 cup
Salt

Stepwise Instructions: Soak urad dal and rice in water separately, for 10-12 hours. Drain the excess water and grind it together in a mixer/grinder to a consistency of condensed milk. Allow it to ferment for addition 10-12 hours at room temperature. It is important to keep it covered during fermentation.

Next day morning add little water and salt. The consistency at this stage should be like "bhajia batter" Pour this batter into concave surfaces of Idli stand. Add little water to pressure cooker and place idli stand into it. Place the lid on cooker and heat for 15-20 min on medium heat. (remove the whistle of pressure cooker)

Take the pressure cooker off the heat and allow it to cool for above 10 minutes. Remove the lid and take the idli stand out. Separate idlis from the stand using spoon.

Serve Idlis with coconut chutney and/or sambar.

Instant Shreekhand

saffron
cardamom powder

Stepwise Instruction

all the above ingredients mix together. sugar 1:1 add dryfruits, littlebit cardamom powder and saffron. mix it well!

Sweet Pumpkin Cookie (Gharga)




Servings : 2 persons

Time : 30 minutes

Ingredients :

Red/Yellow pumpkin grated 1 cup
jaggery 1 cup
Rice flour 1/2 cup
semolina 1/2 cup
wheat flour 1/4 cup
clarified butter 1/2 teaspoon

Stepwise Instructions :

Mix clarified butter, grated pumpkin, jaggery and cook on medium heat for about 10 minutes. Covering the mixture with a lid helps cooking it fast. Turn off the heat. While still hot, add the rice flour, semolina and wheat flour and mix thoroughly. It will form a dough. After 30 minutes split the dough into small balls. Apply thin layer of vegetable/canola oil to a plastic paper and place the ball on it. Then press each ball with hand into a circular shape. Deep fry these cookies on medium heat till brown color.

Cookies taste better when eaten with clarified butter.

Sweet Semolina



Servings : 2 persons

Time : 15 minutes

Ingredients :

Semolina 1 cup
clarified butter 6 spoons
sugar 1 cup
little bit of jaggery
2 cup water


Stepwise Instructions :


Mix semolina and clarified butter into pan and saute on medium heat with continuous stirring untill brown. Add water and stir with large spoon. Cover it with lid for 2 minutes. After two minutes take the lid off and add sugar and jaggery and mix it well. Again cover with lid for 2 minutes and then mix it well.Use the same cup for measuring semolina, water and sugar. Alternatively use half sugar and half jaggery mixture.

serve with mango pickle and poha papad.
